Title: Breadmakers... ?
Post by: Pastis on August 06, 2010, 06:46:49 PM
I've just done a quickie search and it appears that some of you, you know who you are  spider:, have got these devices  whistle:

With the prospect of hoooge increases in prices for a loaf of bread I've been thinking about getting one, that and obviously the delicious smell and taste of me own fresh bread in the morning  razz:

So, where are we at with these marvels of modern technology?  Are they gathering dust?  In use every day?  Stashed in the cupboard waiting for the boot sale?  ...

Which model and make?  Years ago I was quite a dab hand at making bread by hand but I don't think I want to go back that far; looking for a piece of kit that'll do the job nicely.

Without rummaging to the back of the cupboard, I think mine's  this one  (http://www.morphyrichards.co.uk/ProductDetail.aspx?Product=48322) , I've hardly ever used it, but when I have, the results have been very good.

Read the reviews on Amazon like...

I reckon the nut dispensers are just summat more to go wrong... I bung my seed in right at the start and the taste (as Miss D testifies) is delicious. If you want to add something else later the machine beeps at the appropriate time...

Ours came from Lidl ~ cheap as chips and still going despite almost daily use for two years.

Problem with your theory though Pastis ~ it ain't the bread that is rising (see what I did there!) it is the price of the flour. No breadmaker in the world will compensate for that.

TOP TIPS:
1) We find that unless eaten within max 48 hours home made bread is fit only to feed to the ducks.
2) As a singleton you would be advised to get a breadmaker that is able to make small loaves as well as "normal" sized ones. Not all do.
3) Lidl bread flour is the best around both on price and flavour. Avoid the "name" brands as they are expensive and taste no better.

Go for it IMHO I have one of these Panasonic SD-254WXC but have had various ones since about 1990.  Great fun to use the smell is fantastic as Snoops says you have to eat it fresh but you could freeze it.  I have even made jam in mine.  There are loads of easy flours around, wholemeal, sunflower sun-dried tomato.

Take a peek here...

Excellent info ladies and gents and thank you. The groundwork will continue. You're right Snoops; I want something that'll do a modest size, not hoooge, but also has the versatility to do different types. Lidl prices were suggested by someone not on here and there's one locally so that's good. Was discussing wheat prices with the B-in-law this weekend  eeek: eeek:

How much you reckon you can make a loaf for then Pasty?

I'm seriously considering getting one pf these too with the predicted massive price hike due.

Just need a petrol and diesel making machine now....and no, I can't run on converted/cleaned chip fat unfortunately.  cry:

I haven't costed it out tbh but as someone who likes to eat bread whether it's sarnies or with a meal, soup or whatever it HAS to make sense. I imagine like most things you could probably cut the cost by 50% by doing it yourself. We have a farmer's market up the road every Saturday and there's a guy who sells the most delicious walnut loaf, but for 3 quid a pop!  eeek: . But it's not only that, it's the pleasure and enjoyment factor and of course experimenting  razz:

Let's say I buy a breadmaker for £100; and use it for 2 years, ok, that 14p a day and then the powering costs added to that. I wouldn't say it's a great saving but neither is it a great luxury. It's a difference and a choice  cloud9:

For a basic loaf the cost of ingredients works out as per:
Flour (Lidl Strong Bread Flour) 69p per bag (currently priced) Makes 3 "large" loaves
Dried Yeast (Morrisons) 8 sachets (1 per loaf) 80p
Teaspoon Sugar, pinch of salt, Teaspoon olive oil, Water from tap.
So in theory we are, at current prices, making a loaf for about £0.43

Remember that other "brands" of flour (Hovis for example) currently cost well over a £1 a bag.

For some reason known only to the German mind Lidl sell bread flour but not yeast  Banghead

No, cos the bread-maker mixes everything up and then does all the kneading for you... then lets it rise like... then kneads it again... then lets it rise... again like... then shapes it... then lets it rise a bit more... then bakes it....

With ours, if we fancy rolls instead of a loaf, we can set it to mix, knead etc through the night and then take the dough out in the morning, cut and shape it into rolls and they cook in the fan oven in about 20 mins (often less, depends on size of rolls). Great for Breakfast ~ there are never any left for lunch!

As for the fancy breads ~ having one child allergic to nuts, seeds etc that is not something we do. Although he wouldn't eat the resultant bread we were warned of the dangers of "cross contamination" by his Consultant so such things never even enter the house. In theory you can add anything to the bread mix BUT a breadmaker will, at the end of the day, only make bread ....... NOT CAKES!

For those who want to try it out it is not a quick exercise (Knowing the Bear's impatience when it comes to his grub). From start to finish a loaf will take several hours so no point in saying "I fancy some fresh bread" and hoping to bung the makings into the machine and be eating it ten minutes later. It is best done overnight but if your bedroom is over the kitchen you will hear it churning away!

Well if it'll do that to bread mix, why can't it do a cake mix? Shrugs:
Same thing, mixing/kneeding in'it....roughly like in'it?

It will NOT make cake ~ trust us on this. Cakes need much less time in both preparation and cooking and they need a different temperature.

Only thing you get by turning the temp up (and on some machines you can) is a crustier loaf. It does not cook any quicker.

Growler, just do it.

Mine was a basic machine and it has a time delay on it if I want to use it. I worked from home yesterday afternoon, so at 1600hr's, water in the machine, farmhouse flour mix on top, pressed the start button, 1900hr's ready for tea.
I could have put the water and flour in at 0700hr's and set an eight hour delay (up to 15hr delay) on it as I left the house and it would have been ready at the same time if I wanted. The smell is wonderful, the texture and flavour superb, and the satisfaction that I made that..... OK, the machine helped a bit like

Oh, and Snoopy, Lidl's in Blazing Smoke do dried yeast in sachets, and as you said, a selection of different flour mixes too

Now you need oven gloves or at least a clean tea towel to prevent burnt fingers.

Growler will need lessons in getting the bread out of the machine ~ it is not as simple as one might think.  whistle:

Growler, I have good news.

Mine has a "cake" setting, and the recipe book has recipes for cakes. It doesn't just mix them, it bakes them too
Recipes are standard cake mix (looks like Victoria sponge from the ingredients), variations on this include adding cherries, adding mixed fruit, and adding chocolate chips. There are also recipes for Banana nut cake and apple & walnut cake

I've never tried any of them, but if they're half as successful as the bread, to quote you, "sweet as a nut"

A quick google shows there are plenty of other breadmakers that do this and many more recipes

I foresee a burn tongue

Wee, sleekit, cow'rin, tim'rous beastie,
O, what a panic's in thy breastie!
Thou need na start awa sae hasty,
Wi' bickering brattle!
I wad be laith to rin an' chase thee,
Wi' murd'ring pattle!

I'm truly sorry man's dominion,
Has broken nature's social union,
An' justifies that ill opinion,
Which makes thee startle
At me, thy poor, earth-born companion,
An' fellow-mortal!

I doubt na, whiles, but thou may thieve;
What then? poor beastie, thou maun live!
A daimen icker in a thrave
'S a sma' request;
I'll get a blessin wi' the lave,
An' never miss't!

Thy wee bit housie, too, in ruin!
It's silly wa's the win's are strewin!
An' naething, now, to big a new ane,
O' foggage green!
An' bleak December's winds ensuin,
Baith snell an' keen!

Thou saw the fields laid bare an' waste,
An' weary winter comin fast,
An' cozie here, beneath the blast,
Thou thought to dwell-
Till crash! the cruel coulter past
Out thro' thy cell.

That wee bit heap o' leaves an' stibble,
Has cost thee mony a weary nibble!
Now thou's turn'd out, for a' thy trouble,
But house or hald,
To thole the winter's sleety dribble,
An' cranreuch cauld!

But, Mousie, thou art no thy lane,
In proving foresight may be vain;
The best-laid schemes o' mice an 'men
Gang aft agley,
An'lea'e us nought but grief an' pain,
For promis'd joy!

Still thou art blest, compar'd wi' me
The present only toucheth thee:
But, Och! I backward cast my e'e.
On prospects drear!
An' forward, tho' I canna see,
I guess an' fear!

It is week three of the competition and the six remaining bakers are making bread in Kent. If they found cakes and biscuits challenging, it's bread that's considered the real test of a baker's mettle.
In the shadow of Sarre Windmill, the bakers will be kneading, proving and knocking back their dough under the watchful eye of baking writer Mary Berry and master baker Paul Hollywood. And as they battle it out to produce the perfect loaf, Mel and Sue will be tasting Britain's earliest bread roll, finding out what happened to bread during the Industrial Revolution and relating the hidden history of the sandwich.
Making bread is an ancient skill. Which of the bakers will best cope with the pressure and who will be the one who has to leave the Bake Off?

A breadmaker does certainly open one to a whole new set of culinary experiences.

SWWLTBO has her own version of Bara Brith ~ excellent when toasted and spread with butter and honey.

http://en.wikipedia.org/wiki/Bara_brith for those who have not heard of it. SWWLTBO uses chopped dates rather than dried fruit in her recipe as I am not keen on "dead flies".

Today's Chelsea Buns had chopped apricots rather than currants.

Oh fvck... ok, if you must  ;)

This is for a 500gr loaf and of course follow the sequence ...  whistle:

1 egg
water 185ml including the egg in a container, then
80ml semi skimmed milk
350gr unbleached white flour
2 tsp's of cocoa powder (NOT drinking choccy!)
1 tsp salt
25gr caster sugar
15gr butter
1 tsp of yeast
50g of of plain, continental dark choccy broken into bits (I use Black & Green's Organic 70% Cocoa dark choccy)

Add the choccy bits after 20 mins of programme 1 (ordinary white loaf) on the kneading cycle.

I was on the phone to Nick whilst adding the choccy bits; it sounded like pouring nuts and bolts into the machine!  razz:

Work this one out 'cos we can't

Both boys "hate" bread made in the breadmaker.
Use breadmaker to make and prove the dough, using the same recipe. Remove dough from breadmaker and either shape and bake it as a Bloomer or as Cob Rolls and they can't get enough of it.

If you accidentally turn it off again take the dough out of the machine. Use "floured" hands. Shape the dough into a "Bloomer" on a floured surface and bake it in the oven.
Alternatively make the dough into bread rolls and again bake them in the oven.

Works well if you have a power cut too but you will have to knead the dough and leave it to rise for half an hour.

Fruit Bread .... We make ours with cold tea instead of water and add chopped dates and raisins but no currants. Sometimes we add chopped dried apricots as well.
Cold tea (same amount as you would water) 1.5 oz soft butter, usual amount of salt and sugar
Cinnamon, Ginger and All spice + a pinch of nutmeg are added to the flour (mix it together before putting it into the bread maker)
Once in bread maker add yeast
DO NOT ADD THE FRUIT YET!
Use "basic" setting and start it.
When it bleeps add fruit for second mix
Then leave it to do its thing.
Adding fruit any earlier leads to a soggy loaf!!!

Most excellent as fresh bread or toasted once it is a day or two old.

All as basic 1lb loaf. Fruit and spices to taste. We use about a level teaspoon full of each spice except where I have said "A Pinch" and as much fruit as is decent.

About half a cup of each fruit is enough ..... but the wetter the fruit the wetter the loaf.

Woodstock says use a metric double handful of fruit ....too much Keith Floyd methinks  ::)

I made a carrot cake in mine yesterday, I looked at it during the process and thought it looked a little strange. On completion it looked even stranger.  It wasn't until I washed the bowl out that I realised that I must have thrown the paddle out with the last loaf that I made which only had a couple of slices eaten from it.  sad24:

Yep as the bread maker came from a car boot sale costing £2.00 it seemed daft going down that route.  We riffled through the bin a bit but  became embarrassed after a while.  It's very undignified. So this morning we went to another car boot sale.

I have a bread maker complete with paddle.  £5.00  Result. cloud9:
