what to do with.............

A little farmers market has just opened round the corner, they sell a  huuuuge lucky dip bag of fresh mixed veg for 65cents!  eeek:

I now have a kitchen full of veg including.....
 beetroot (recipes welcome)
 potatoes
 carrots
 banana peppers
 massive courgettes
 massive onion
...........and a swede,  noooo:  what do I do with a swede? any helpful tips please?

We had Chlodnik at the pub on their round the world Polish night so then had to find a rescipe.  This is the one we've used.

cept we used non chicken stock and served boiled egg in quarters so you dip it in the soup like what Justina the Polish waitress told us to
