It's all done by visual/verbal metaphors like.
WESTERNS
Black Hat = Baddy
White hat = Goody
Dirty Hat = Drunk
Bowler Hat = Salesman or Doctor
WAR FILMS
German Accent = Nazi
German with English Accent = Gestapo or anti Nazi (depending on if his name appears above or below the title)
French Accent = Liable to be the villain or traitor (See also Greek or Italian) but may be on "our side" .... last reel will reveal all about his allegiances. He will get shot either way.
Cockney Accent = Chirpy British Squaddy/Matelot, May be a bit of a lad but will come good in the end.
Eton Accent = Decent Chap, Officer, Bit set in his ways but will follow orders.
Middle and Upper Class accent with Moustache = RAF Officer
Scottish Accent = Engineering Officer ("She cannae tak any more Captain")
Glaswegian Accent = Sean Connery playing any part irrespective of the character's alleged origins.
American Accent = Hero
