The other day I noticed that we seem to have a lot of empty jars about the place. I was going to take them to the bottle bank but then it occurred to me. Why not make some pickled onions. After all, how hard can it be? Normally, I would consult Google for some hints and tips before embarking on such a project but this time it was full steam ahead.

A few hundred yards from our house is one of those marvelous shops that are sadly disappearing from our cities. This one is a greengrocer in the front room of an ancient 2 up, 2 down terrace (est 1882) with a big window through which you can see what seems to be tons of a fruit and veg that hide an elderly couple who's combined age must be about half a million.

I enter, I am the only customer in the shop (this is normal because only one customer at a time can fit in) and the following conversation ensues :

TG : Morning, you all right then?
Old lady: Yes thanks, set meself on fire in the living room last night though.
TG: Er...
Old lady: What can we get you?
TG: Er.. Well, I want to make a load of pickled onions. Have you got the makings?
Old lady: Just down there on your left. On the floor.

I behold what appears to be a sack of small onions buried under what seems to be a fields worth of some other
bigger onions.

TG: How much is there?
Old lady: Dunno
TG: How much is the sack?
Old lady: Dunno (confers with little old man)
Little old man: £3.50.
TG: Vinegar?
Little Old man: £2.00 for that big jug of spiced vinegar behind you.

I decide this will do and I want to leave because I am scared I might get buried under a heap of cabbages if I make a sudden move. I grab the end of the sack and pull, and pull and pull. There seems to be no end to this bloody sack. At last with one mighty bound I am clear of the shop and am on the street with a 5 litre jug of spiced vinegar and a TEN KILO bag of onions!

Needless to say Mrs TG laughed herself silly at me but to hell with that. Put the radio on to the football, crack a tin and get peeling onions.

There are many complex recipes for pickling onions (I found out after I bought them) so I decide to follow the simplest recipe I can find. which is soak overnight in brine, put in jars with vinegar the next day. Leave for a few weeks. Stuff face. fart a lot.

I still have 2-4 kilo's of onions left if anyone wants 'em. I'll email them to you.

I hope they are nice.

If anyone has any pickling tips I'll thank you to keep them to yourselves for now cos it's too late and I'm sick to death of bastard onions.

Just received the email.

Pickling: red cabbage, red peppers, onions, small cucumbers, tomatoes
Also making various flavoured olive oils and picking up my soaked fruit for the Christmas cake.

Well, It starts off banging on about pickled oinions then my stalker rears up then on to IVF then adopting greengrocers or similar then fruit soaking.

It all makes perfect sense really. You should really be used to this by now.  ;D

I haven't had pickled walnuts for a while, but I seem to remember they were quite good.

Eggs are best but use white vinegar or they go a funny colour. Walnuts, as I recall, need to be laid down for some considerable time.

My Dad used to make them and pickling onions were a nightmare to get hold of in Spain so he often used shallots. Not quite the same but still pretty tasty.

When I was told to change to a low fat/low salt diet, it ruled out most of the foods that I like.

Problem is that, having been diagnosed as Type 2 Diabetic I am also instructed to eat either Pasta/Potatoes/Rice or Beans with every meal. It does make life very difficult trying to find a balance between the various demands made by different specialists. So they referred me to a stick thin "Dietitian" (who looked so young as to make me suspect she was on "work experience"). She started by telling me I should reduce the sugar I take on my breakfast cereal. "Difficult" I replied "As I don't eat breakfast cereals because of the amount of 'hidden' sugars and salt they contain". "What about using skimmed milk in your tea and coffee?" "Don't drink either" I replied "Only green tea because that has no milk and no caffeine" and so it went on for half an hour at the end of which she gave up. I am still admittedly well overweight and eat less than my 7 year old son. Typical evening meal is 4oz grilled Chicken Breast, One small potato, table spoonful each of carrots, peas and cabbage, glass of water and a cup of green tea.
Breakfast every day is 6oz porridge made with real rolled oats and water and a pinch of cinnamon, cup of green tea with slice of lemon, Lunch is usually two slices of wholemeal bread, flora and a slice of ham made into a sandwich.
So you tell me why I cannot get the weight off. Only snacks are a meusli bar if I "Hypo" because of low blood sugars.

I am going to make thousands of the bastards this year. I mean thousands of 'em.

I have no jars though and have launched an appeal with the neighbours and family so they will be contributing to their own xmas pressies in a way. Which is good in these tough times.

We do the same with jam ~ don't think it odd.
We long ago realised that there was nothing we could buy for friends and rellies that they could not and did not already buy for themselves so the obvious idea was to spread the word that from now on only consumable pressies would be given and we hoped they would reciprocate as our house was/is bulging at the seams with unwanted tat, jumpers that fit no-one, socks that will never be worn etc etc. Now we all exchange food and drink and compete to see who can make or grow their own or find unusual/regional foods etc. Works well I can tell you.
Eldest Daughter, who has a house and family of her own, was thrilled two weeks ago when I sent her flowers from the Scillies and a birthday cake from Yorkshire.. She actually cried because no-one ever thinks about Mum's wanting a cake as well but everyone expects Mum to make a cake for them. She was very, very pleased at the idea.

It works ~ sure the younger ones still get toys/electrical goodies but for the grown ups nothing but consumable items.

Re: pickling spices etc.... Have always pickled with malt vinegar. Can't be doing with small expensive quantities of spices from supermarkets so purchase from markets and add dried chillies when pickling onions.

I salt long term onions for pickling, to keep them crisp but for those that will be consumed within three months there is no need honest trust me on this one. If you are going to eat them before or at Christmas don't bother with the whole salting thing, just label the jars so that you know which is which.

Yep it's really easy especially with all the Asian shops in Leicester mustard seeds are really cheap in them.  You will need a few different flavoured vinegars.

There are loads of recipes on the interwebbly.  I to my shame have 2 recipe books for mustards. redface:

Why this in pickled onion thread? thats two weeks ago and my forgetful brain forgets already! but i do remember my parents words of not talking to strangers haha! i was otherwise engaged with bath as already mentioned in telford  thread. but as you only live next door in nottingham you could visit leicester one day!! point:
