Title: The all new favourite recipe thread.

Scrawled in his own hand.  It really was delicious and very very tender, just like me.

Make-it-up-as-you-go-along slow cooked belly of pork.
 
Ingredients:
 
Slab of belly pork
 
1/3 bottle of Original HP Barbeque Sauce
2 desert spoons of marmalade or sweet mango chutney
Honey
Black pepper
 
Method:
 
Place the belly of pork in an oven tray and cover with HP Barbeque  Sauce and 2 spoons of marmalade or sweet mango chutney. At this stage you can add other things. I added some Henderson’s Relish (a Sheffield thing), fennel seeds and a little tamarind paste. Alternatively you could add Five spice (for a Chinese flavour), or nothing at all.
 
Seal the oven tray with a double sheet of aluminium foil wrapped tightly round the edges of the tray.  Cook in at 150c for about 4 hours.
 
Remove meat from tray and sieve the sauce into a frying pan. Taste for sweetness and add honey to taste. The dish can stand a lot of sweetness. Add black pepper, but no salt.  There is plenty of salt / flavour enhancer in the HP Barbeque Sauce.  Reduce the sauce until it becomes thick.
 
Place the meat back on the oven tray,  but this time on a rack.  Cover the meat with the reduced sauce and cook for about 10 mins at 200c.
 
Leave meat to stand for 10 mins before cutting into slices to serve.

Sounds good ~ I used to do something similar with racks of Pork Ribs using the five spice.

My favourite Pork recipe is to take a whole loin of pork, slit it two thirds through, stuff with apricots, glaze with apricot jam and slow roast. An expensive cut of meat I know but then lil bruv is a butcher so I get it cheap.

Note: No Cider!

Err ~ I forgot to mention .... Take the stones out of the apricots and once stuffed the pork loin need to be rolled and tied with string.

The slow cooked belly pork was lovely Miss C  happy088  My oven runs a bit high, so the sauce had already been redced to a 1/2" thick piece of summat that was roasting dish shaped, but I added the honey to what juices were left and did it at 200 for the last 20 minutes, excellent. And the roasting dish was OK the morning after after being soaked in plenty of hot water and fairy liquid

In return, I give you Mozzarella stuffed meatballs

Ingredients
1lb of minced pork
1 tsp of mixed herbs
1 tsp of sea salt (omit this if using a jar of sauce)
1 or 2 cloves of chopped garlic
1 ball of mozzarella
4 tbs of olive oil
1 jar of puttenesca sauce or better still, make your own. See below

Method
Combine all the ingredients except the olive oil, mozzarella and sauce
Divide this mixture into 8, and flatten into 3 - 4" patties
Divide the mozzarella into 8
Squeeze each piece of mozzarella into a ball, and put in the middle of each pattie
Wrap the meat around the mozzarella and roll these into 8 balls
Heat the oil to moderate in a frying pan with lid and place the meatballs in
Once browned, turn them over and brown the other side
Once browned, and the puttenesca sauce, bring to a simmer, and simmer for 10 minutes
Turn the meatballs over, and cook for a further 10 minutes
I serve it with boiled taters, carrots and purple sprouting broccoli


Puttenesca sauce

Ingredients
2 tbs of olive oil
1 x large red onion chopped
2 x cloves of chopped garlic
8 x capers
5 x anchovy fillets
2 tbs parsley or 1 tbs of dried parsley
1/2 tssp of dried chilli flakes
20 sliced olives
2 x large tins of chopped tomatoes

Fry the onion and garlic until soft.
Add all the other ingredients
Bring to a simmer, and leave to simmer for 20 minutes

This will make enough sauce for two meals

I prefer Corned Beef Hash Cakes

Ingredients

  400g/14oz floury potatoes, such as Maris Piper or King Edward, cooked and mashed
  400/14oz canned corned beef, cubed
  2 spring onions, trimmed, finely chopped
  4 gherkins, finely chopped (Optional)
  1 tbsp English mustard
   salt and freshly ground black pepper to taste
  100g/3˝oz plain flour
  200g/7oz fresh breadcrumbs
  2 eggs, beaten
  100ml/3˝fl oz vegetable oil

For the dipping sauce

   200g/7oz ready-made brown sauce
   100g/3˝oz ready-made mayonnaise
   1 tsp Tabasco sauce
   4-6 handfuls baby leaf spinach or watercress, to serve

Preparation method

   1. In a bowl, mix together the mashed potatoes, corned beef cubes, chopped spring onions, gherkin and mustard until well combined. Season, to taste, with salt and freshly ground black pepper.
   2. Roll the mixture into 8-10 equally-sized balls, then flatten into patties.
   3. Sprinkle the flour and breadcrumbs onto two separate plates. Beat the eggs in a bowl. Dredge each patty in the flour, then dip it into the beaten egg, then roll in the breadcrumbs until completely covered.
   4.Heat the oil in a frying pan over a medium to high heat, until a breadcrumb sizzles and turns golden-brown when dropped into it. Fry the corned beef hash patties, in batches, for 3-4 minutes on each side, or until crisp and golden-brown on both sides and warmed through.
   5.For the dipping sauce, in a bowl, mix together all of the dipping sauce ingredients until well combined.
   6.To serve, place one handful of spinach or watercress leaves into the centre of each of four to six serving plates. Place one or two of the corned beef hash cakes on top of each. Serve the dipping sauce in dipping bowls alongside.

I'd not worry about the amount of bacon, so long as there is enough to make a meal any left over can go into the fridge for a BLT the following day. Bleddy cat can fend for itself .... does it share its caught virtual mice?

Once, when visiting Holland and feeling gastronomically adventurous, I took SWWLTBO to a French restaurant in the town of Venlo. I can read a little Dutch and we can both speak some French but the menu left us stumped. I asked the waiter what various dishes were but one item "The Chef's Special" was beyond us and the waiter, who turned out to be Portuguese, was struggling to translate the French onto English for us.
Finally he sought help from the Chef who pronounced that it was a bird.
"Chicken" queried the wife

"No, no... beeegar"

"Turkey?" she tried

"No, no, no beeegar!"

"Goose?" I tried helpfully

"No no no .... Beeegar .... My special deesh! (clearly he wasn't Dutch or French either)

"Swan? Peacock?" the guessing game went on until finally  "OK... We'll have the special" I decided.

Very nice it was too ..... then the owner appeared. Very large and VERY Dutch.

"How is the meal?" he asked in faultless English

"Wonderful" gabbled SWWLTBO round a mouthful "What is it?"

"Escalope of Ostrich in a grape sauce Madam"


I'm just glad I didn't ask for a bloody drumstick

Got a new one .....saw it on CDWM........... redface:..........but is lovely even if you are not a sprout fan ..

boil a dozen sprouts for five mins (dont let them go soft), blend with half tub of cream cheese, 1 clove of garlic, plenty of salt n pepper and two big tsps of horseraddish sauce, also soak two slices of crustless bread...squeeze out the water and chuck that in the blender too. stick in tub in the fridge to set........

oriental pork chops for the bbq.......score criss cross patterns on either side of your chops, then mix in a bowl the following....

1 tblsp finely chopped ginger (not nick)
1 crushed garlic clove
1 finely chopped chilli
2 tblsp dark soy sauce
1 tblsp ketchup
1 tblsp brown sugar

rub the mixture all over the chops, getting into all the little nooks (oooerrr)

leave in the fridge over night. BBq next day. yummy.

IMO Goose eggs of any sort are good. Actually that is not true as I have never had a golden one but I am sure that if ever I did it would be good.

The season is practically over now but if you like eggs next time you see one I would suggest you try it.

I watched  The Hungry Sailors  (http://www.itv.com/food/programmes/hungry-sailors) for the first time last night, they seem to do some basic but good stuff, I shall be having a closer look at some of their recipes

I'd hazard a guess that fresh watercress can be more peppery than rocket, which is no bad thing. Last year I was treated to a meal at Locanda Locatelli  ( http://www.locandalocatelli.com/ (http://www.locandalocatelli.com/) ) and had the mushroom risotto which was unbelievable   Drool: Drool: Drool:
I suspect there was a dash of citrus in there but hardly noticeable.
