Well goose fat obviously ::), but for a long time I have been coating them in semolina cloud9: My big sis uses grated parmesan, which I tried this week and can pronounce to be yumster.
Oh, and Heston Blumenthal can fook off, though he has a point about sharp corners IMHO.

I go for the par'boil and then bash 'em about in the saucepan (lid firmly on) before tipping them into smokingly hot goose fat. Always bring the fat to heat on the hob and once the spuds are in, sprinkled with sea salt from Geurande (Fleur de sel de Guerande), and basted pop the roasting tin into a hot oven until spuds are golden brown..... Perfick!

Prety much the same as Snoopy. Parboil for ten minutes (Wilja spuds are unbeatable for roasters IMHO), swish them around in the metal colander so that the metal edges on the holes rough the spuds up a bit, into the minimal amount of hot goose fat, turn after 15 mins, again after 30 mins, and done after 45 mins. I too have a large bag of Fleur de sel de Guerande so will give that a try as I enjoy cracked sea salt on mine once on the plate

Pretty much the same here. I sometimes score the tops of the potatoes for extra crisp factor. Drool:

I have people that are doing just that right now, so I am doing summat instead of shovelling snow
If I had a two-way radio I'd be "Snowflake One" or similar

In the RAF runway snow clearance was always known as "Operation Blacktop".
It usually consisted of a line of 'Erks' armed with shovels and brooms. ::)
