Try Wenslydale with cranberries BM, cheese to die for.... which will probably happen given time!

Here you go:
Freeze round of brie overnight. Wrap in sheets of filo pastry stuck together with melted butter. Place in oven @160c for about 20mins. Take out, slice like cake and serve with cranberry sauce. Cheese should be well melted and gooey, but not completely liquid. Heavenly.

That brings back memories of my childhood.

Beerhead that sounds scrummy am going to try that.  A round of Camembert top sliced off under the grill for 10 mins or so until gooey. Serve with toasted pitta bread.
