As a Commander of the picklement and baking BAb(Hons) I would like your opinions on any or all of the above.
If anyone has a favourite recipe for pickles, sauces , relishes and chutney I would love to have them. I am looking for three or four recipes that I can use over and over again. Thanks in advance chaps and chapesses. razz:

It is my favourite recipe.... Shrugs:

Caramelised red onion and chilli chutney cloud9:
Ingredients
Serves: 20
7 medium red onions
2 medium shallots
1 medium white onion
1 sweet pepper (red or orange; grilled until black, peeled, seeded and diced)
1 red chilli (deseeded and diced)
270ml balsamic vinegar
50ml red wine vinegar
220g dark brown sugar
7cm stick of cinammon
2 fresh bay leaves
1 large sprig of rosemary (leaves picked and chopped)
olive oil
1. Peel and chop the onions and shallots into chutney size pieces, add olive oil to a pan add the onions, bay leaves, cinammon and rosemary.
2. Cook for about 20 mins on a low heat until the onions are golden,soft and sticky, add the chilli and pepper cook for a further couple of mins.
3. Add the vinegar and sugar, simmer on a low heat until thick and chutney like.
4. Spoon into sterilised jars. Can be left for 4-6 weeks to develop flavour.

There is some mustard on the go, there is some piccalilli -both mine and Mr C's ready to go, slightly different/hugely different.

The chick peas are cooking as we speak, or at least whilst I have a diatribe. ::) I have just found a fantastic recipe IMO for roasted and flavoured chick peas I think I will do some of that too. Ooooo I can feel my goddest gown slipping on even as I type. angel1

I like pickles walnuts. Many years ago in a land far far away, well, in Worcestershire anyway, I lived on a farm which had a fabulously old but productive walnut tree. It had other stuff too like pigs and cows and hops.

Are you intimating that they used to pickle all those things? eeek:
Did they try offering pickled hops to Harrods for example? (I doubt that pickled pig would have been a roaring success, however, given the owner and the average client background!) whistle:

lol: My father made his own beer. We had quite a walk home from school and in the autumn he would make us collect the hops that had dropped off the harvest wagons. In those days the hops were harvested by hand,not sure if it made any difference to the amount of wastage but to a seven year old it seemed an awful lot. Anyway said hops were dried in the bathroom Shrugs: and then made into beer. It is little wonder that I turned out as I did.

lol: lol: Thank's JOM, it is a large jar that contained gherkins at one stage. Regarding the face looking out it is either a Jesus and a miracle or Mr C whom I haven't seen for the last few days. I will phone the Vatican immediately. razz:

I had no idea they grew pineapples in Dorset.
Perhaps they are easier to pick with 6 fingers?
