There is a time for everything and everything has its time TG.
The whole point of pickling is to preserve foodstuff at times when there are plenty for times when there are not.
I used to have a handle on life but it broke.

Although you cannot get proper pickling onions in the summer, I find you can get a similar result if you slice up a 'normal' onion, put it in vinegar overnight with some black peppercorns and a chilli (If you like it hot - no smut please).  You get a stronger result if you leave it for a couple of days, but not too long or the onion goes soft.
