Someone told me that pickling onions are seasonal and I wont be able to get any.

Seasonal onions. When you do make them make LOADS!

Although we have had success making them with shallots too.

My Dad used to make them and pickling onions were a nightmare to get hold of in Spain so he often used shallots. Not quite the same but still pretty tasty.
