Pickles, sauces , relishes and chutney.

As a Commander of the picklement and baking BAb(Hons) I would like your opinions on any or all of the above.

If anyone has a favourite recipe for pickles, sauces , relishes and chutney I would love to have them. I am looking for three or four recipes that I can use over and over again. Thanks in advance chaps and chapesses. razz:

Caramelised red onion and chilli chutney  cloud9:

Ingredients
Serves: 20
7 medium red onions
2 medium shallots
1 medium white onion
1 sweet pepper (red or orange; grilled until black, peeled, seeded and diced)
1 red chilli (deseeded and diced)
270ml balsamic vinegar
50ml red wine vinegar
220g dark brown sugar
7cm stick of cinammon
2 fresh bay leaves
1 large sprig of rosemary (leaves picked and chopped)
olive oil
 

1. Peel and chop the onions and shallots into chutney size pieces, add olive oil to a pan add the onions, bay leaves, cinammon and rosemary.
 
2. Cook for about 20 mins on a low heat until the onions are golden,soft and sticky, add the chilli and pepper cook for a further couple of mins.
 
3. Add the vinegar and sugar, simmer on a low heat until thick and chutney like.
 
4. Spoon into sterilised jars. Can be left for 4-6 weeks to develop flavour.

Those recipes are my pet hate ...... cussing:.........you google example spag bol and it says mince and a jar of bol sauce ...........that is NOT a recipe ........ Banghead

 Spank2: Spank2:  It all went very well, the down side is that I now have to make some more.

There is some mustard on the go, there is some piccalilli -both mine and Mr C's ready to go, slightly different/hugely different.

This week I will making humus  and channa dal.  The chick peas are cooking as we speak, or at least whilst I have a diatribe. ::)  I have just found a fantastic recipe IMO for roasted and flavoured chick peas I think I will do some of that too.  Ooooo I can feel my goddest gown slipping on even as I type. angel1
