When we went away for new year Mrs TG had a bowl of soup in a restraunt. I forget what it was, carrot & aardvark or summat. She liked it a lot.
She sayeth unto me : Start making soup at home you lazy bastard.
Now we have a blender at home that as far as I can remember was only ever used for grinding coffee beans and that was years ago.
I have given it a new lease of life and have made 2 varieties of soup so far that have been generally well received though I have cheated and used stock cubes rather than make my own stock.
However, I have obtained a soup recipe book from readtitswapit.co.uk (happy088) and this coming weekend I will venture into stock making.
Any tips from you gastronomes would be appreciated.
PS I am presently trying to work out the pro's and con's of booqet bucket garnet bags of herbs.

I googled my first recipes as well. But I'm concentrating on the stock.
My research so far indicates I need a MASSIVE pot. A stock pot no less. Still, a lot of wot you read on the Internet is bollocks innit?

Why are you so concerned about the stock? And what's wrong with a cube? Strikes me if I needed to make the original stock as well I'd need a meat carcass and / or loads of veg and another 48 hours... confused:

For me, it's not in the eating. I just want to do it. I am starting to find cooking quite therapeutic.

May I recommend Mannish Water:
2 pounds goat head, organs and feet (2 pounds lamb meat may be substituted)
1 1/2 gallons water
5 green bananas, sliced
1 pound yams, diced
1 1/2 christophenes (also called chayotes), seeds and skin removed, chopped
1/2 pound taro root, diced
1/2 pound carrots, diced
1/2 pound turnips, diced
1 1/2 bunches scallions, chopped
2 scotch bonnets or habaneros, chopped
3 sprigs fresh thyme, chopped
Salt
Chop the meat into small pieces, rinse and place into a large stockpot. Add the water and bring to a boil. Reduce the heat and simmer 3 hours, until the meat is tender.
Add the remaining ingredients and cook until the vegetables are tender. Season with salt and serve.
You'll never be asked to make soup again whistle:

I should point out that the Mannish Water is nice just as long as:
a. You havent been told beforehand what goes into it
and
b. You havent seen it being prepared. The traditional version of this uses the entire goat.

Have to say that with soup it is all about the stock. You don't need a huge pot. Just one big enough for your needs. Mine was a tenner from tesco and holds a chicken carcass plus all the other stuff and I think about four litres of water.
Favorite soup is spiced butternut squash. Cook squash in veg stock, blitz it all up, add some creme fraiche and whatever curry paste you prefer, we like tandori, blitz again return to heat. Yumster!

To be honest Wenchy I tried it because I was curious about the taste given that the only part of the goat that wasnt used in the recipie was the skin.
Didnt ask about why it was so called until after I'd had a second helping and was wondering why I was getting strange looks of some people. redface:

Well if you can freeze soup you should in theory be able to freeze stock.

Quite alright. ;) I'm no expert though! I keep mine in the fridge for a day or two then skim the fat off the top and then freeze it. I freeze it in one litre bags and also as ice cubes. Then it's available for adding taste or as a base for risotto or soup.

I didn't go out looking for it I just grabbed the biggest pot there was in tescos. The thing is a lot of people/recipes insist that you need a proper stock pot with copper bottom or heavy base I was just trying to illustrate that you didn't.

Hugh Fearnley Wotsit and AWT both say stock cubes are fine and even the blessed Nigella advocates their use unless making Jewish Penicillin

I'm sure they are. Personally I don't use them. I always have plenty of stock in the freezer. I find it theraputic to make.

I want to make stock/soups or whatever else and if other people enjoy the results thats a bonus. Eating them myself is an optional extra. ;)

I enjoy cooking and baking. However, I can't eat it all myself. So a lot of it gets frozen and given to be people at various times.
For instance, I saw my Brother at the weekend. He was given chicken stock, leek and potato soup, chicken noodle soup, a batch of brownies and two batches of cookie dough. His freezer gets filled with stuff and I got to cook without sticking it all in my gob.

In fairness, Apey is the king of soups. His celery and stilton the other day was delicious.

It's also given me an idea to use a bit less water, half a small thinner sliced cabbage dice the onion, celery and peppers, add some okra, garlic, a dark roux and some chicken and sausage for a really nice gumbo. :thumbsup:
